Veggie Broth

 This is going to be the base for a lot of my recipes so I figure I might as well post it now before my first real recipe.

You know all of those scraps of veggies you just throw away? The ends of carrots and celery, the dark spots on potatoes that you cut off, potato skins if you peeled them (Don't expect a lot of potato peeling in my recipes. I need the Iron. The only time I peel a potato is if I am making potato skins) the onion skins and tops, onions that have dried out beyond any of the parts of the veggie you consider inedible and collect them for the next week. Throw them in a freezer bag and freeze them. 

The day before you're going to need it, throw all of that into a pot of water, and boil, cool, the strain.  (Alternatively, you can use your Instapot or Ninja Foodi Duo for this.)  If you don't use all of it, you can store what you haven't used in a mason jar in the fridge for a few days, Watch so it doesn't go bad. You will need to use it in just a few days if you do this. Alternatively, you can freeze it in freezer bags or freezer-safe containers of some sort. You can also can it if you have a pressure canner or you Ninja Foodi is also a pressure cooker. Mine is not. 

When you are ready to use it, just throw it into the pot, and voila you have veggie broth. The next recipe will be Loaded Potato and Broccoli Soup. Until then...
